.. does not really exist. except that to make this cheesecake, i took a break from disassembling one of the songlines prototypes (the pig halves story, no reason to waste good material!). the cheesecake got raving reviews and everyone asked me for the recipe.
so here is my recipe - based on one i found on the internet. if you are on a low calorie diet, i would recommend eating celery instead ;-)
lemon - white chocolate - mini cheesecakes (failsafe)
ingredients
1 1/4 cups white spelt flour
2 tablespoons caster sugar
1 shake citric acid (non failsafe alternative: 1 teaspoon grated lemon peel)
1/2 cup cold butter, cubed
filling
4 packages (250g each) cream cheese, softened (30sec in the microwave on high)
1 cup caster sugar
10 ounces white baking chocolate, melted and cooled
2 tablespoons white spelt flour
2 tablespoons normal fat cream
2 tablespoons citric acid mix * (non failsafe alternative: lemon juice and 2 teaspoons grated lemon peel)
2 teaspoons vanilla extract
4 eggs, lightly beaten
* citric acid mix: 4 tablespoons warm water, 1teaspoon sugar, 3/4 teaspoon citric acid)
preheat oven at 160°.
in a small bowl, combine the flour, confectioners' sugar and citric acid ; cut in butter until crumbly. prepare 14 high (!) muffin tins/paper cups/foil cups. Press a bit onto the bottom of each tin/cup. place in a baking form. bake at 160° for 25-30 minutes or until golden brown. cool on a wire rack.
in a large bowl, beat cream cheese and sugar until smooth. beat in the melted white chocolate, flour, cream, citric acid mix and vanilla. add eggs; beat on low speed just until combined. spoon into tins/cups to the rim.
bake at 160° for 50-60 minutes or until center is just set and top appears dull.
cool on a wire rack for 10 minutes. cool 1 hour longer. refrigerate overnight - they actually taste better after having been in the fridge. supposedly freezes well too .. i will need to give that a try.
